This paper aims at explaining the concept of social enterprise and the process that brings to the creation of this type of organization. To do so, we decided to bring an example from the Food&Beverage sector, using the case of the Swiss start-up ZüriChips as point of reference. The global challenge that this enterprise aims to address is the problem of food waste and to solve it, it proposes an innovative product, the ZüriChips, which are crunchy and tasty chips derived from rescue bread. The first two chapters focus on defining what is a social enterprise and the role of social entrepreneur. In the third chapter, the topic of food waste is presented, which is then extended in the last chapter with the presentation of the case of ZüriChips. This case is particularly useful to describe the process of formation of a social enterprise and to understand team's dynamics.
